Quick answer: Cocoa percentage is the share of a chocolate's weight that comes from cocoa-derived ingredients such as cocoa mass and cocoa butter. It usually predicts sweetness and intensity better than it predicts quality, calories or flavanol content. Compare the ingredient list and nutrition panel alongside the number.

Try a fair side-by-side test

Bring two or three plain bars to the same room temperature. Break similar-size pieces, smell before tasting and let each melt slowly. Note sweetness, acidity, roast, bitterness and aftertaste.
